Chicken Tacos

Ingredients

  • 2 Chicken Breast 
  • 1 Red Onion 
  • 1 Lime 
  • 1 Tomato
  • 1 Avocado 
  • 1 Mango
  • Fresh Cilantro 
  • Your favorite cheese (Sharp Cheddar, Cotija, etc)  
  • 3 Tablespoons Sour Cream 
  • 1 Jar of Adobo Sauce 
  • Tortillas (or Taco shells)
  • 1 Teaspoon Cayenne Pepper 
  • 1 Teaspoon Cumin 
  • ½ Teaspoon Salt
  • ½ Teaspoon Pepper
  • ½ Smoked Paprika

    Start by peeling the mango, a potato peeler could make this process easier. Cut around the seed in the middle. Take the flesh of the mango and cut into ¼ inch strips, like half potato wedges. Add to a small bowl. Finely chop half the red onion and add to the bowl. Destem cilantro and add to the bowl. Squeeze lime juice into bowl. The amount of lime juice is up to you.

    If you have a zester or cheese grater, zest the lime into a small bowl. If you don’t have either that’s ok! Combine sour cream, salt, pepper, lime zest, and about 1 teaspoon lime juice. Stir until everything’s incorporated. Let chill in fridge. 

    Next peel your avocado and remove the seed. Slice avocado and add to a small bowl. Use a fork to mash the avocado. Dice tomato, the other half of the red onion, and add to your bowl. Season with cayenne pepper, cumin, ½ teaspoon of salt and ½ teaspoon pepper. Set aside.

    Next were going to butterfly the chicken breast, spread it open, and season both sides with light salt and pepper, about ½ teaspoon, and smoked paprika. 

    Take the adobo sauce and rub on both sides.

    In a large, preferably cast iron, skillet heat 1 tablespoon of olive oil on medium heat. Lay the chicken in and let cook for about 5-7 minutes on both sides. You’ll know it’s done when its slightly charred and cooked all the way through.  

    Wrap tortillas in a damp paper towel and microwave until warm and soft. Don’t overcook!

    Gamechanger: If you’re using tortillas you can heat some oil and butter in a separate skillet and toast both sides until they’re golden brown.

    When the chicken is done cooking, let rest for about 2-3 minutes. Slice chicken into thin strips like fajitas. Add your guacamole, lime crema, mango slaw, chicken and cheese to your tortilla, and that’s a wrap! Enjoy!
